109. Chardonnay y sobremesa

De esos vinos que invitan, sobre todo cuando tiene paso por madera, a guardar esa copa para comenzar la sobremesa. Chardonnay me hace pensar en frutos secos, melocotones y pasas rubias, almendras tostadas o nueces.

Un buen chardonnay me pide algún queso cremoso, el contrapunto de grasa y sal. Un buen chardonnay me pide incluso que deje abiertamente que se caliente, que lo pruebe más espeso, más alcohólico, menos cremoso y gentil. Un buen chardonnay me pide espacio en la memoria y respeto por el vino blanco.

Y tengo que ceder.
